  • 1 tsp Vanilla extract Pure vanilla extract recommended
  • 2 cups Milk Whole milk for creaminess or oat/almond milk as alternatives
  • 1/2 cup Strong brewed coffee or espresso
  • 1 cup Cold brew coffee Store-bought or homemade
  • 2 tbsp Pumpkin purée
  • 1/2 tsp Pumpkin pie spice
  • 2 tsp Brown sugar or maple syrup
  • 1/2 cup Heavy cream or oat milk Heavy cream creates the best frothy topping
  • 1 dash Vanilla extract Optional for extra flavor

Equipment

  • 1 Small saucepan For heating milk and pumpkin mixture
  • 1 Milk frother Handheld electric frother works best for creamy texture
  • 1 High-speed blender Optional, for extra-smooth PSL
  • 1 Large glass or mug For serving
  • 1 Measuring cups and spoons

Method

  1. For the Pumpkin Spice Latte

Combine ingredients: In a small saucepan over medium heat, whisk together the milk, pumpkin purée, sugar, and pumpkin pie spice .
Heat until steamy: Cook, stirring frequently, until hot and steaming. Do not let it boil .
Add vanilla and coffee: Remove from heat. Whisk in the vanilla extract and the hot brewed coffee.
Froth: Use a milk frother or whisk vigorously until the mixture becomes frothy and well-combined .
Serve: Pour into two mugs. Top with whipped cream and a sprinkle of pumpkin pie spice if desired.
For the Pumpkin Cream Cold Brew
Make the pumpkin cream: In a small bowl or measuring cup, combine the pumpkin purée, pumpkin pie spice, brown sugar (or maple syrup), and heavy cream (or oat milk) .
Froth: Use a milk frother to blend the mixture until it becomes light and fluffy, about 5 minutes .
Assemble: Fill a large glass with ice and pour in the cold brew coffee.
Top and serve: Spoon the frothed pumpkin cream over the cold brew. Sprinkle with a pinch of pumpkin pie spice and serve immediately

Notes

  • Making Your Own Pumpkin Spice: Combine 2 tablespoons ground cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground nutmeg, and 1 teaspoon ground cloves for a homemade blend .
  • Make-Ahead: You can prepare a batch of the pumpkin spice latte mixture and store it in the refrigerator for up to a week . For the cold brew, store the pumpkin cream separately from the cold brew; the cream will keep for up to five days but will flatten—re-froth before serving .
  • Homemade Cold Brew: Steep coarsely ground coffee in water for 12 hours, then strain . Use a 1:3.5 ratio of coffee to water for best results .
  • Hot Version of Cold Brew: To make a hot version of the Pumpkin Cream Cold Brew, gently heat the cream mixture in a saucepan for about 5 minutes before frothing, then top your hot coffee with it .
  • Dietary Adjustments: For a vegan version, use coconut cream or full-fat oat milk in place of heavy cream, and your preferred plant-based milk . Skip refined sugar by using maple syrup or date syrup .
